Can you help me with recipe for couscous salad?
I had a great couscous salad. The ingredients listed are couscous, rice vinegar, lime juice, basil paste, arugula, sun dried tomatoes, currants and pearl onions.
Does anyone know how to make a recipe from this I can work with? I’m not a cook, I was thinking to cook a box of couscous and maybe throw in half a cup of vinegar and a tablespoon of lime juice… but I have no idea if that will taste bad. And I don’t know how to add the basil paste without it being a big clump.
You need some extra virgin olive oil, and you never use vinegar by the cup, only by the spoon.
Cook your box of couscous by the instructions on the box.
2 tablespoons of oil, 2 tablespoons of vinegar, the juice from 1 lime, 3 tablespoons of chopped fresh basil, 1 cup of chopped arugula, and the remaining to taste.
Mix well with the couscous.
